It's been a while! This summer everyone in my family was gone...and I stayed home. So at the start of summer I had BIG plans on making these elaborate dishes......but then I realized I didn't HAVE to cook and I got lazy. Needless to say, I really didn't cook at all! Now everyone is back home, school has started back and so I am back in the kitchen cooking up tasty dishes! I don't know what was going on with me this summer because I have so much fun in the kitchen and I have truly missed it.
So for my first creative dish I decided to make a NON-traditional meatloaf. As a kid, I never really liked meatloaf at all! Somthing about eating a big chunk of meat just didn't seem appealing to me. But I am proud to say THIS meatloaf is sooooooo good! So what makes it NON-traditional? Well., I opted for turkey instead of beef and added a twist with feta cheese and basil. Mmmmmmmm! And instead of the normal red sauce that goes on top, I made a really easy tahini sauce. I hope you give this one a try because the flavors are so good! Here's what went into my turkey meatloaf:
-ground turkey
-green bell peppers
-yellow bell peppers
-onions
-garlic
-roasted red peppers
-basil
-feta cheese
-salt
-pepper
-bread crumbs
For the tahini sauce:
-tahini
-red wine vinegar
-garlic powder
-smoked paprika
-cumin
-pinch of salt
Preheat the oven to 400 degrees. I baked my loaf for approximately 45-55 minutes, which also included some broil time to get the top a little crispy. Be sure that the internal temperature is 160 degrees so you know it's cooked all the way through!
You can watch how I put my meatloaf together below. It's super easy. I'd imagine it would be just a delicious as a meatballs and even burgers....YUM! I know a typical meatloaf is served with a red sauce on top and mash potatoes but I opted for an extremely simple tahini sauce and roasted potatoes instead. Such a tasty meal!
