Let me just say it again......I am so excited for the new year! I am kicking things off on the healthier side but you wouldn't even know it because this soup is just delicious! Sometimes I just get in the kitchen and experiement and this time it turned out really good. The kale soup also has potato which makes it silky and just an essence of garlic mild garlic flavor since I boiled it whole in the soup. And the potato cake is not really a cake at all.....but more of a stuffed potato dome! LOL!! Super flavorful with mushroom, smoked turkey sausage and lentils...mmmmm!!!! Here's what you will need for this dish:
Ingredients:
-lentils
-potatoes
-kale (dinosar kale pictured, any kale would work)_
-mushrooms
-smoked turkey sausage link
-garlic
-fresh sage
-red onions
-salt & pepper -olive oil
-red wine vinegar
1. Peel, cut and boil the potatoes in salted water. When the potatoes are cooked remove half of them for the mashed potatoes and leave the remaining in the water to continue boiling. Add kale and garlic cloves. Once eveything is nice and soft remove the garlic cloves and blend until smooth. Salt and pepper to taste.
2. Add lentils to a pot of water with celery salt and cook until tender.
3. Dice mushrooms, red onions and smoked turkey. Sautee together with olive oil, add fresh chopped sage, lentils and red wine vinegar. Salt and pepper.
4. For the mashed potatoes, add milk and olive oil and mash. Make a little thick so that it holds up. Take filling and make a mashed potato stuffed ball (see video). Once you have you balls made, place them under the broil so that they can form a slight crust to hold up in your soup.
My favorite part of cooking is plating and then EATING! I placed the "cake/ball" in the middle of the bowl so it could swim in the soup and garnished it with carrot ribbons. It was not only pretty it was really good!!!! I loved digging into the filling and turning this silky soup into a hearty one! Perfect on a cold day....or any day!!!!
